RECIPE INGREDIENTS


  • 200g (1 cup) Zero Egg liquid

  • 200g (1 cup) plant-based milk (coconut preferred for taste, but other milk substitutes will work fine)

  • 50g (4 tbsp) sugar

  • 2.5g (1 tsp) ground cinnamon

  • 8 thick (½”) slices of a bread (brioche, Pullman loaf or Texas Toast recommended)

  • 60g (4 tbsp) plant-based butter

  • For French Toast Bites: Hazelnut spread for filling. Baked in a muffin tin. 

 

RECIPE PREPARATION:
FRENCH TOAST


  • In a bowl, whisk together Zero Egg liquid with plant-based milk, sugar, and cinnamon until fully combined.

  • Dip bread in batter, making sure to cover both sides. Rest on a wire rack or plate to drain any excess batter.

  • Melt 15g (1 tbsp) plant-based butter in heated non-stick pan. Add soaked bread slices. Do not overcrowd the pan. Cook over medium heat. Flip when the bottom side has turned golden brown. Cook other side until done.

  • Serve immediately with fresh seasonal fruit and maple syrup, or transfer to a serving plate placed in a warm oven.

 

RECIPE PREPARATION:
FRENCH TOAST BITES


  • Preheat oven to 350F (175C)

  • In a large bowl, whisk together Zero Egg liquid with milk, sugar, and cinnamon until fully combined.

  • Cube 200g (about 2 cups) of thick bread. Add to bowl and allow bread cubes to soak the Zero Egg batter.

  • Grease muffin tin. For each Bite, fill muffin cup about halfway with soaked cubes, then add hazelnut spread and top off with more cubes. Repeat until all the soaked cubes are used.

  • Bake for 15-20 minutes, then check the bottom for doneness. Cook until all parts are toasted through.

  • Let rest and cool. Serve with fresh seasonal fruit.

     

    Additional Notes

    -Batter can be prepped ahead of time. Store covered and refrigerated. Use prepared batter within 2 days.
