Classic Scramble

RECIPE INGREDIENTS


  • 100g (½ cup) Zero Egg liquid

  • Vegetable oil for pan

  • Seasoning

  • Optional: your choice of add-ons – plant-based cheese, vegetables (fresh or pre-cooked), fresh greens and herbs…

 

RECIPE PREPARATION


  • Heat nonstick frying pan on medium-to-medium high heat. Drizzle with vegetable oil (about a tbsp).

  • Pour Zero Egg liquid on to heated pan. Liquid will spread naturally to form an even layer. Cook for about 1 minute.

  • Stir and turn over cooking liquid, as it sets, to create your preferred curds’ size.

  • Cook an additional 2-3 minutes, gently scrambling and flipping the curds as they cook.

  • Even though Zero Egg scramble can be eaten undercooked, for best results cook scramble thoroughly.

  • Serve immediately.

    Additional Notes

    - Thoroughly cooked scramble stores well. Keep scramble covered or wrapped in the refrigerator. Use within 2 days. Reheat, covered, in a microwave toaster oven, or in a pan with a little bit of oil.

     

    - Zero Egg scramble freezes well. Chill completely and place in an air-tight container or zip-lock bag. Remove as much air as possible. Use within 2 weeks. Reheat, covered, in a microwave, toaster oven, or in a pan with a little bit of oil.

Prep ahead of time


Thoroughly cooked scrambles store well. Hold in refrigerator or walk-in, covered or wrapped. Use within 2 days. Reheat on a steam table, in oven, or in pan or flat top with a little bit of oil to prevent sticking.
